It almost seems criminal that with all the blender recipes we’ve done on SP, we haven’t done one for salsa yet.
4 large ripe tomatoes
1 med. onion
1/2 green pepper
2 jalapeno pepper
1 chili pepper
1 celery stalk
2 tbsp. vegetable oil
1 tbsp. white vinegar
1 garlic clove, crushed
1/2 tsp. black pepper
1 tbsp fresh cilantro
Peel tomatoes and blend in blender until chopped fine. Remove into sauce-pan. Put remaining ingredients into blender and chop fine. Transfer to saucepan and simmer on low heat for 20-25 minutes. Put in airtight container and refrigerate overnight. Serve with corn-chips.
